Sprouts are a British festive staple, but they're not just for Christmas! This recipe champions sprouts with a balance of flavours from the smokiness of bacon and sweetness of chestnuts while the cream ties everything together.

    Ingredients

    • 1 kg 1 Brussels Sprouts

    • 1 tsp 1 Vegetable Oil

    • 200 g 200 Smoked Bacon Lardons

    • 100 g 100 Chestnuts

    • 200 ml 200 Chicken Stock

    • 100 ml 100 Double Cream

    • 30 g 30 Chives

    Directions

    • In a pan cook the bacon on a low to medium heat to release the fat, cook for around 2-3 minutes before placing into a separate bowl.
    • Add the sprouts into the pan and roast on a high heat until the sprouts are coloured well. Add the bacon back in.
    • Add the chicken stock and cream and reduce by half, add the chestnuts, chives and seasoning.
    • If you want the sauce thicker just continue to reduce the liquid to your desired viscosity.

    Notes

    • Adding a splash of white wine before the stock can lift the flavour even further.
