Ingredients

  • 140 g 140 Plain flour

  • 3 3 Eggs

  • 300 ml 300 Semi skimmed milk

  • 3 tbsp 3 English mustard

  • 3 tbsp 3 Rapeseed oil

  • 6 6 Pork sausages

  • 100 g 100 Broccoli

  • 50 g 50 Grated mature cheddar cheese

Directions

  • Tip the flour and eggs into a large bowl and whisk to a thick, smooth paste. Stir in the milk, then stir in 2 tsp mustard.
Leave to rest for 30 mins.
  • Heat the oven to 240 degrees. Coat a heavy roasting dish with the oil, add the sausages, well-spaced apart, and cook
for 5-7 mins, then add the broccoli and cook for another 3 mins. Mash the grated cheese with the 1 tbsp mustard.
  • Pour batter over the sausages and broccoli, then scatter over most of the mustardy cheese. Cook for 15 mins before
turning the oven down to 220 degrees. Sprinkle over the remaining mustardy cheese, then cook for 5-8 mins until
melted, and the batter is puffed and golden brown.
